day 5

Last night it became clear to me that I have succeeded 4 meatless days already – without even having the tiniest bit of a craving for meat.

Lunches have pretty much been the same. Cheese on whole grain bread (home made, if I might add!). If I want to continue having a greener way of living I need to seriously work on some lunch options. I like avocado a lot, just hate the fact that they’re either not ripe enough or way too ripe. I also bought some spreads. One with tomato and chili, the other one with curry. Those might be nice topped with some cucumbers or tomatoes. Cream cheese I like as well. I could try egg salad. Wow, all of a sudden I have a big range to chose from :-)

dinner time

This week’s theme seemed to be brassica vegetables. We had everything from cabbage and broccoli to cauliflower. I just learned from wikipedia that the two last named are in fact the flowers of the plants. Who knew?

Tuesday – Kulturhuset

TuesdayTuesday night Morten picked me up from work. We would go to a place called ‘Kulturhuset’ – culture house – which lies right across the street from Brinjas boutique on Islands Bygge. On a rainy day nothing much happens on Islands Brygge but as soon as the suns comes out the place is filled with people sunbathing and taking a dip in the harbour pool. Morten had tortilla chips with cheddar and chicken and 4 nice dips on the side. I went for the tagliatelle with bell pepper, zucchini, chicken and pesto. In case you wonder how this could be a 20-minute-Tuesday – it took about 20 minutes from when we ordered till we got the food. A bit of cheating, but not really… =)

Wednesday – Ground Beef with Cabbage and Cauliflower

WedensdayThis dish really doesn’t fotograph very well. But let me tell you it’s a quick tasteful dish with lots of curry and cumin, two of our favorite spices.

Thursday – Pasta Meat Sauce !

ThursdayProbably my favorite dish ever. And also one we came up with ourselves. The trick is lots of veggies that get the chance to cook at least 30 minutes in the tomato sauce. It makes it very creamy (Morten’s tip!). When all cooked, top it with cubes of mozzarella cheese – delish!

Friday – Bagels

FridayNot really a fish-dish but you when you have a craving for fast food, this one’s at least a healthy decision (at least that’s what we tell each other). Morten likes his with marinated chicken, turkey bacon and humus, and I like mine with turkey breat and chili cream cheese.

Saturday – Pasta Meat Sauce !!

SaturdayI told you it was my favorite dish! Kristian came over to watch a college football game. Kristian and Morten go way back to when they both were swimmers. With speedos and all ;-) This time we kicked it up a notch (an expression I learned through The Sims, how cool?). We would put it in the oven at the end with cheese on top. Lots of cheese!

Sunday – Left Overs with Veal

SundayWe used up all the vegetables such as brocoli and cauliflower and tossed it together with fresh pasta and veal.

This week’s project brings us all to a new level (Can you tell I have seen too many episodes of America’s Next Top Model?). Our plan is is to have soup every single night (to make up for last week and some of the weeks before). So far it goes very well, I’ll keep you posted!

JambalayaAs far as I know it’s a dish from the southern states of America: Rice, vegetables and shrimps.

Tuesday – Dinner at Madklubben (the food club)

MadklubbenWe went out to celebrate Niller’s and Morten’s successful business co-operation. Madklubben spoiled us with lovely appetizers and really good lamb. For dessert we went down to the harbour and had some Belgian waffles and softice.

Wednesday – Pasta Salad with Tuna

IMG_3578Not knowing if we would get fish when going to the summerhouse in the weekend, I had to squeeze in another fish-dish. Love the colored pasta, makes me happy =)

Thursday – Lasagna

First night at the summerhouse we got lasagana, silly me forgot to take pictures. Let’s help your imagination with some adjectives: yummy, cheesy, meaty, … and there was lots of it!

Friday – Grilled Salmon

SalmonBirthe (Morten’s mom) and I were co-operating here. We made grilled salmon stuffed with zucchini and lots of herbs, a nice summer salad and a dip based on greek yoghurt. For dessert Birthe surprised us with meringues filled with rhubarb and lots of whipped cream. Did you notice how we got fish on fish-friday even though we weren’t fully responsible for the dinner plan?

Saturday – Chicken Kabob

BBQOne of the best things about summer is grilled food. Morten had a blueberry beer for dinner. Later when playing a game called Bet your Brain we had some lemon cake covered with chocolate.

Sunday – Bagel

Okay, we cheated once again. No soup, but a bagel. No picture. Oooh, I’m bad…

My food post, finally! I’m very excited to show you all the things we’ve had for dinner the past week (I’ll skip Monday as we only had hangover pizza, bad pizza, bad!). Hope you’ll enjoy!

Meatballs with potato salad20 minutes – Tuesday: Meat balls with spring onions and a potato salad with cucumber, radish and green pesto dressing.

RoastbeefWednesday’s surprise: This week neither MOrten nor I surprised one another. It was Morten’s dad Ole who invited us over and served roast beef, potatoes and fried onions for us.

Almost MoussakaTomato – Thursday: We had a dish called ‘Almost Moussaka’. Zucchini with ground beef, tomatoes, homegrown thyme, lots of garlic and feta cheese.

Brazilian Salmon StewFriday’s Fish: This amazing recipe I found on Simply Recipes, a food blog I just recently discovered. Nicely cumin-marinated salmon with tomatoes, onion, bell pepper and coconut milk served on brown rice.

Mac & CheeseS.O.B. BurgerYummy/Deluxe Saturday: On our date, I had Mac & Cheese and Morten had an S.O.B. burger. It was fun eating at Hard Rock Café!

Broccoli Cauliflower SoupSoup – Sunday: We ended that delicious week with a broccoli-cauliflower soup.

Well, I hope you all followed Sam’s advise on eating before reading ;-)

sewing

This is what I’ve been doing today:IMG_3474To understand the awesomeness of this picture people need to know that I never even attached a button to a shirt or anything else that has to do with sewing. When joining Brinja’s boutique I really wanted to learn how to sew the flowers for the amazing headbands Brinja makes. So after 30 seconds of trying to sew on a straight line I just started making flowers. Brinja could instantly see that I’m a natural ;-) Today I made 12 flowers in different colors. It took about 3 hours (Brinja makes 12 in like 30 minutes). It was a fight but I love looking at the result. It feels amazing to do something crafty, something where you see a difference by the end of the day.

honey, what’s for dinner?

You might have noticed that there have been quite some food posts lately. Reason for that is our very grown up decision to eat after a dinner plan (so we wouldn’t end up eating pizza every night; bad pizza, bad!). When sitting together and planning we considered all the recommendations by the MInistery of Health, such as eat fish twice a week, eat a variety of vegetables and so on. We decided to have certain groups of food on certain days, e.g. fish on Mondays and Fridays. When saying ‘fish on Fridays’, I could see Morten’s eyes light up. He had a mission:

To find an adjektiv or noun for every day. And it had to start with the same letter as that day.  Oh, what fun that was. That’s what we ended up with (please notice that our plan is in Danish, so it doesn’t neccessarly meet the requirements when translated into English):

Ocean – Monday (mer – mandag): We’ll eat fish or shellfish.

Twenty minutes – Tuesday: We’ll have a dish that takes no more than 20 minutes to prepare.

Wednesday’s surprise (onsdags overraskelse): I’ll surprise Morten with a dish and every 4th week he has to surprise me.

Tomato – Thursday: Anything’s allowed, if only it contains tomato.

Friday’s fish: Guess what, we’ll have fish!

Yummy/deluxe –  Saturday (lækker luksus lørdag): Here’s where we can spend some more money on ingredients or maybe get an appetizer or a dessert or even go out for dinner.

Soup – Sunday: We love soups, here’s our chance.

I’m really excited about this project! I’ll probably give you a weekly summary on what’s been on our plates =)

thursdaydinner… something yummy like this: chicken filled with mozzarella cheese and chili pesto; tomato salad with red onions and garlic; and oven baked potatoes. And not to forget: lots of basil!

herbal update #5

The day has finally come: I can use my herbs for cooking!

Last night’s dinner was onion bulgur-otto with baked bell pepper and parmesan fried turkey breast. Delish!

IMG_3422The ingredients – the thyme didn’t grow as much as e.g. basil but let me tell you it smelled amazing!

time out

Even though the deadline for my paper is getting closer by the minute, I still find myself avoiding it. Around noon I took a time out in Classens have. For an hour I thought about nothing else but the sun warming my tummy. But no worries, I’m about to be done with my paper – I’m only missing the conclusion. Now I’m off to a class that’s called BodyCombat at fitnessdk
