I’m packing my backpack for a weekend trip to Germany to visit my good friend Stephan and my family. Apparently snow storm Jennifer is a bit of a trouble maker on the island of Rügen.

Can’t figure out whether I think it’s cosy or spooky. Probably a bit of both. I hope Stephan will be able to get through to the ferry harbor to come and get me.

lasagna – vegetarian style

For those of you who like American Football, you know that Sunday is game day. Here in Denmark they broadcast the games live (meaning pretty much in the middle of the night!). We have our friend Kristian over for dinner and then the guys get into a comfy position on the couch and enjoy hours of football. So manly!

I love taking care of the two by making manly food. Well, most of the times. Tonight we’ll have a girly dish: vegetarian lasagna. I tried this recipe in school and fell totally in love with it.

6 portions:

1 onion, finely chopped

1-? cloves garlic (see, I would add 5 – it’s totally up to you)

1 1/2 tbs. olive oil

8 oz. (250g) mushrooms, sliced

1 can peeled tomatoes, chopped

1 small can tomato puree

2 tsp. oregano

2 tsp. basil

14 oz. (400g) carrots, shredded

8 oz. (250g) leek, sliced

12 lasagna noodles, whole wheat would be nice here

8 oz. (250g) mornay sauce

4 oz. (125g) grated cheese

salt and pepper to taste

Combine onion, garlic and olive oil in a sauté pan and cook over medium heat. Add mushrooms and cook for 5 minutes. Stir and add leeks and carrots. Add tomatoes, tomato puree and herbs. Turn down the heat and let simmer for 15 minutes. Preheat oven to 400°F (200° C). Spread a little bit of mornay sauce on the bottom of a baking pan. Put a layer of lasagna noodles down first, add 1/3 of the vegetable sauce and top it with a bit of mornay sauce. Repeat two more times. You wanna end with a layer of lasagna noodles, topped with cheese and lots of mornay sauce. Cook for 30 minutes. Remove from oven and let cool 5-10 minutes before serving. Serve it with some whole wheat bread and a fresh salad.

food tasting I

With one week left on my food analysis report, I arranged a food tasting last night! Friends from both my and Morten’s flagfootball team came to lend me their well-trained taste buds. After tasting three different tomato soups, we enjoyed some home made chili and watched an NFL game. A night well spent!

It’s finally weekend!

So many good things are happening today/tomorrow:

1. Brinja is coming home from a 20 days vacation. I’ve missed her sooo much and I’m so looking forward to long hours of talking and laughing!

2. Harry Potter is in the movies and we’re gonna see it tonight! I love, love, LOVE Harry Potter, the books as well as the movies. For the past weeks whenever there was the trailer showing on tv I would switch to another channel, because I didn’t want to see anything before I actually see it in the movies. I get goosebumps just thinking of tonight =) Obsessed? YES!

3. Morten and I have been togthether for 2½ years. 2½ amazing years! I love, love, LOVE Morten (a teensy bit more than Harry). We’re gonna go out and have burgers =) At Hard Rock Café! Is there a more romantic way to celebrate your day than with burgers?

4. Tomorrow is Sunday which means I can finally do my post about our dinner plan! I’m dying to show you all the delicious things we’ve had for dinner this week!

5. I got tagged by fabulous Sam and lovely Gabbi. The bloglandbond is getting stronger day by day! Thank you guys for sharing precious moments of your life with me, and that goes to everyone out there. Who ever created blogging gets a virtual hug from me right NOW!

IMG_3483I lived up to my expectations: I made exactly 12 headbands, here in nice blue shades. Funny detail in this picture: The prints on the wall reflecting in the glass counter. The talented artist is Lea Bolvig, a friend of mine and Brinja‘s brother‘s girlfriend.

bachelorette party

Morten’s cousin Sanne is getting married in August. So yesterday we went out and celebrated her bachelorette party! It was a perfect day! It started with a picnic in Classenshave, then we would send Sanne to a photo studio, where she would get her photo taken (you know what kind of photo!). After that we had someone teach us belly dancing (Sanne’s future husband is turkish, so she might need some tricks) and then we had the nicest three course dinner ever. The night ended in a gay dance club – kind of a weird experience =)
