big peas and beans day


That cook book I was talking about
yesterday advised me to introduce a peas and beans day. You pick a day, put all the dried peas and beans you like in water, let them soak for at least 12 hours and then cook all of them  at once (separately, of course). Then you freeze them down in smaller portions. That way you’ll always have some peas and beans ready to use. Smart, huh?

So now I’m cooking chickpeas and lima beans. Will have another peas and beans day tomorrow (bad planning, I know) with kidney beans, mung beans and some black eyed beans. After that I should be fully prepared for some delicious stews, soups and curries :-)

flexitarian

Studying health and nutrition you come across 1 or 2 vegetarians. Vegetarians always have fascinated me. Don’t know why. I find they’re lifestyle very interesting. Inspired by a fellow student I went out to buy a vegetarian cook book (for those of you who speak Danish – or want to learn-, I can really recommend it!). Now, I expected recipes with tofu, tofu and tofu. Luckily, only two tofu recipes. Not that I have tasted it, but I find myself having an aversion to it. Maybe I will be proved wrong at some point.

Inspired by the book and advised by my fellow student I’m gonna try to eat vegetarian style throughout this week. I have a strong feeling, that I could never be a full-time vegetarian (I just learned to love fish) but I would love to see how my body feels after a green treatment. I can really see myself being a flexitarian, though.

So last night I made a chickpeas curry with tons of spices served on rice. Very tasty and very filling. Definitely a keeper!

a smoothie a day

Happy New Year to everyone! I hope that 2010 brings lots of health and happiness your way! We’re trying to get a piece of health and happiness by having a smoothie a day. We got this inspiring smoothie book for christmas which includes some amazing fruit and vegetable smoothie recipes.

I find myself full of new year’s resolutions. Some of them silly, some of them of more serious nature.  The one most important to me is keeping up that healthier lifestyle. For several months (well 2) we were trying to eat heathy food and work out regularly. I  know this resolution’s a bit worn out, but hey, working on a healthy body is probably the best gift one can give oneself, isn’t it?

The coolest fact about my birthday is that it’s also my dad’s birthday. He was born in ’58 and I was born in ’85. How cool??? We’re gonna meet online later to unwrap each other’s gifts. Thank god for the internet ;-)

going to the mainland – road trip, baby!

Tonight I’ll be on a road-trip to the mainland. Struer Saints will be hosting an off season cup for flagfootball. And my team will be going (and kicking all the guys’ asses). Well the last one was kinda wish thinking. But it’s gonna be fun and exciting. Hope I’ll get the chance to take some pictures, so the ones of you that still don’t know what flagfootball is get an idea ;-)

food tasting II

IMG_4175Part of this semester is making food and trying different ingredients and preparation methods. Best part about this exercise is trying all the delicious recipes. Here’s a picture of our pita bread stuffed with hummus, indian spiced chicken and crispy vegetables. YUM!
